Casserole of Turkey Leftovers

2 cups of diced leftover cooked turkey
2 cups of diced boiled potatoes
1 cup of cooked peas
1 large carrot, shredded
3 tablespoons of vegetable shortening
1 onion, diced
3 tablespoons of finely sliced celery
1 green pepper, seeded and cut into strips
1 cup of water



Preheat oven to 350ºF.
Place turkey in bottom of casserole dish. Top with potatoes, peas, and shredded carrot.
Melt shortening in frying pan. Add onion and sauté until browned. Add celery and green pepper; sauté for 2 minutes. Spoon onion mixture into center of casserole and stir lightly. Add water to casserole. Cover and bake for 20 minutes. Uncover and bake for 10 to 15 minutes longer or until lightly browned on top. Remove from oven and serve. Serves 4
