6 tablespoons of butter 1/2 cup of flour 4 cups of chicken stock 1 cup of light cream 3 cups of diced leftover chicken 1/2 cup of diced leftover ham one 6 ounce can of sliced mushrooms, drained 1 cup of finely diced celery one 12 ounce package of frozen peas, thawed 3 cups of mashed potatoes, seasoned with salt and pepper Melted butter
Preheat oven to 400ºF. Melt butter in saucepan. Stir in flour, blending well. Gradually add stock and simmer, stirring constantly, until slightly thickened. Add cream, chicken, ham, mushrooms, celery, and peas. Simmer for 15 minutes. Grease 8 individual 12 ounce casserole dishes. Divide chicken mixture evenly among dishes. Pile mashed potatoes in crowns around edges of casseroles. Brush with melted butter. Bake, uncovered, for 25 minutes or until golden brown. Serves 8 |
