Leftover Chicken Dandy

Leftover Chicken Dandy

3 cups of diced leftover chicken
2 cups of leftover rice
1 cup of fresh bread crumbs
1/4 cup of chopped green pepper
1/4 cup of chopped sweet red pepper
1 teaspoon of salt
1/2 teaspoon of curry powder
1/8 teaspoon of pepper
1/4 cup of finely chopped peanuts
3 cups of chicken broth or milk
4 eggs, well beaten



Preheat oven to 350ºF. 
Combine all ingredients, blending well. Pour into greased, rectangular baking dish about 2 inches deep. Bake for 1 hour or until set. To serve, cut into squares or oblongs.
Serves 6 to 8
