Crumb Baskets
5 cups of soft bread crumbs 1/4 cup of minced onion 1 teaspoon of celery salt 1/8 teaspoon of pepper 1/2 cup of melted butter
Chicken filling
1/3 cup of melted butter 1/3 cup of flour 1/2 cup of light cream 1 1/2 cups of chicken broth 1/2 teaspoon of salt 1/8 teaspoon of pepper 1 teaspoon of Worcestershire sauce 1 cup of cooked peas 3 cups of chopped cooked chicken
Preheat oven to 375ºF. Mix bread crumbs with onion, celery salt, pepper, and melted butter. Grease 6 individual casseroles and line with crumb mixture; press into place. Bake for 15 minutes or until crumbs are brown. To make filling, blend melted butter and flout together. Stir in cream, broth, salt, pepper, and Worcestershire sauce. Cook, stirring constantly, until sauce thickens. Add peas and chicken. To serve, spoon chicken mixture into baked crumb baskets. Serves 6 |
