1 1/2 cups of diced cooked turkey Juice of 1/2 lemon 1//4 cup of butter 1 clove garlic, peeled and crushed 1/2 teaspoon of ginger powder 1 onion, chopped 1 tablespoon of flour 1 tablespoon of curry powder 1 cup of chicken stock 1 tablespoon of tomato paste 1 small sweet apple, peeled, cored and chopped 1 tablespoon of raisins A pinch of sugar salt and pepper to taste
Combine turkey and lemon juice in bowl. Melt butter in saucepan. Add garlic, ginger, onion, flour and curry powder. Sauté, stirring constantly, for 3 to 4 minutes. Stir in chicken stock and bring to a boil. Add tomato paste, apple, raisins, sugar, salt and pepper. Cover and simmer for 15 minutes. Stir turkey into saucepan. Simmer for 10 minutes longer. Remove from heat and serve. |
