1 cup of mashed potatoes 1 cup of uncooked zucchini 1 egg yolk 2 Cloves garlic 2 tablespoons of chopped pimento Salt & freshly ground black 1/4 teaspoon of grated nutmeg 2 tablespoons of Vegetable oil
Mix together potatoes, zucchini, egg yolk, garlic, pimentos, salt & pepper & nutmeg. Heat oil in large skillet until hot. Form mixture into patties. Place patties in hot oil. Fry patties until nicely browned on both sides. Lower heat & cook a few minutes longer until heated through. Approximately 5-8 minutes.
