Mixed Leftovers Casserole

Mixed Leftovers Casserole

2 cups of cubed cooked beef
2 cups of cubed cooked potatoes
2 cups of cubed cooked carrots
1 can of condensed tomato soup
1/2 can of light cream
1/2 teaspoon of curry powder
freshly ground pepper
1/2 cup of slightly crushed cornflakes
1 tablespoon of butter





Mix all ingredients except cornflakes and butter and place in a 2 quart casserole. Sprinkle with cornflakes and dot with butter. Bake in 400ºF.   oven until nicely browned, about 20 minutes. Serves 4 - 6
