
| Holiday Turkey Salad

2 cups of turkey, cooked and diced 2/3 cup of celery, (2 stalks), finely chopped 1/2 medium Red onion, finely chopped 1/3 cup of pecans, toasted and chopped 1/3 cup of dried cranberries (e.g., Craisins), chopped 2 Eggs; hard-boiled, chopped 2/3 cup of mayonnaise, or as required 2 teaspoons of Dijon mustard Salt and pepper, to taste |

Toast pecans lightly in a toaster oven (until fragrant). Let cool. In a medium bowl, combine turkey, celery, onion, pecans, cranberries and eggs. In a small bowl combine mayonnaise, Dijon mustard, salt and pepper. Fold dressing into turkey mixture. Cover and refrigerate 1 hour. Serving Size: 4 |
