Savory Chicken Pie

Savory Chicken Pie

1/4 cup of butter
1/4 cup of flour
1 teaspoon of salt
1 cup of chicken broth
1 cup of milk
1 tablespoon of prepared mustard
1/4 teaspoon of rosemary
2 cups of diced leftover chicken
one 8 ounce can of whole pearl onions, boiled and drained
1 cup of cooked peas
one 3 ounce can of mushrooms, drained
1 envelope of instant mashed potato flakes
Melted butter
paprika



Preheat oven to 350ºF. 
Melt butter in saucepan. Stir in flour and salt, blending well. Add chicken broth and milk; cook over low heat, stirring constantly, until smooth and thickened. Blend in mustard and rosemary. Add chicken, onions, peas, and mushrooms.
Spoon chicken mixture into 1 1/2 quart casserole dish; bake for 30 minutes.
Prepare mashed potatoes following package directions. when casserole is cooked, pipe mashed potatoes around edge. Brush potatoes with melted butter and sprinkle with paprika. Return to oven and continue baking for 15 minutes or until lightly browned. Serve at once. Serves 6
