Texas Turkey Trot

2 tablespoons of vegetable oil
1 medium onion, chopped
1 green pepper, seeded and chopped
1/2 cup of ketchup
1/2 cup of pickle relish
juice and grated rind of 1 lemon
1 tablespoon of prepared mustard
8 generous slices of leftover turkey



Heat oil in frying pan. Add onion and green pepper; sauté for 5 minutes. Add ketchup, relish, lemon juice and rind, and mustard. Simmer for 5 minutes.
Add turkey to sauce and cook until well heated. Transfer to serving dish, and serve. Serves 4
