Timely Tricks with Poultry Leftovers

Leftover cooked chicken or turkey freezes well and can be thawed overnight in the refrigerator for one of these fast entrees.

Bistro Sandwich - Split and hollow out a French or Italian hard roll and pack the bottom half with shredded cooked chicken or turkey, chopped red onions, chopped lettuce or spinach, and chopped tomatoes. Sprinkle with balsamic vinegar. Replace the top half of the roll, wrap well, and refrigerate for 30 minutes to blend the flavors.

Curried Turkey Omelet - Fill an egg white omelet with shredded cooked chicken or turkey, minced scallions, a sprinkle of curry powder, and shredded nonfat Monterey Jack cheese.



Hot Wrap - Roll a flour tortilla around a filling of shredded cooked chicken or turkey, minced scallions, minced green peppers, shredded nonfat mozzarella, and a dash of hot pepper sauce. Microwave until the mozzarella melts.

Poultry Pasta - toss hot cooked pasta with a small amount of olive oil. Add shredded cooked chicken or turkey, chopped scallions, and grated Parmesan cheese.

Perfect Peking - Combine shredded cooked chicken or turkey with minced onions, minced celery, chopped water chestnuts, and shredded carrots. Cook in a small amount of defatted chicken stock until the vegetables are tender. Add a dash of hot pepper sauce and hoisin sauce to taste. Serve over rice.
