Sugarplums (Vegetarian)

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 dozen medjool dates OR deglet noor dates 4 teaspoons of unsalted butter, softened 6 tablespoons of confectioners' sugar 1/4 cup of ground blanched almonds, plus 24 blanched almonds; whole 1/2 teaspoon of orange flower water 2 teaspoons of granulated sugar
With a sharp knife slit the dates and remove the pits.
In a small bowl cream the butter with confectioners' sugar. Stir in ground almonds and the orange flower water, mixing well.
Use a demitasse spoon to place some almond filling in each date. Place a whole almond on the filling and gently press the sides of date together. Some filling will be visible.
Roll the dates in the granulated sugar. They will keep for a few days, stored airtight between layers of wax paper.
Makes 2 dozen sugarplums.
Notes: These sweet morsels are a modern version of medieval comfits -fruits, seeds, or nuts preserved in sugar. The orange flower water lends a faintly exotic taste, making them quite addictive.
